Roasted Tomato Pasta

1kg tomatoes

10 sprigs thyme

2tsp sea salt

1tsp pepper

2tbsp olive oil

Linguini

Parmesan cheese

Pre-heat the oven to 100C. Slice tomatoes in half and mix with olive oil and pepper. Strip leaves from thyme sprigs and add to the bowl. Lay cut-side up on a baking tray lined with baking paper and place in oven. Cook for 3 hours. 

Remove tomatoes and chop roughly. Cook pasta according to instructions and remove while still al dente. Keep a cupful of pasta water. 

Mix pasta with tomatoes and loosen with a few tablespoons of pasta water. Plate, and serve with parmesan.
